How To Eat Healthy at Work and While Traveling

Tomorrow I am getting up for a long day at work, and then I am traveling on a train for 5 hours, from Chicago to Detroit. I will wake up at 5:25am and will get to Michigan at 1am. Needless to say: LONG DAY.

How will I stay healthy, focused and energized for this long day?

In the video below I show you what I will be eating over the course of the day, and why it makes sense (nutritionally) as the PERFECT FUEL for the day I will be going through:

I will also be drinking lots of water, as well as mostly likely a fair share of organic green tea. (by fair share I mean, probably about a liter or more over the course of the day!).

Will definitely be carrying a bag of raw, sprouted, dehydrated almonds with me, too (forgot to mention that – I love the ones by “Living Intentions“, they are an awesome, healthy snack!).

Tofu Scramble

Blend sprouted tofu with these ingredients:
20140101-185940.jpg(basil, turmeric, cumin, cayenne, black pepper, salt, apple cider vinegar, nama shoyu, brown mustard, chili powder, garam masala)

Fry tofu mixture in heaping spoonful of coconut oil over high heat.

Stir, stir, stir.

Plate on sprouted grain tortillas:

Optional: Add nutritional yeast to scramble mixture for “cheesy” flavor. You could serve it with guacamole or with a side salad, too.

Kale and Sprouts with Beets and Hempseed Tahini

Celery and water, blended. Black pepper, lemon juice. Pink salt, turmeric. Hemp seeds. ( hemp seed tahini)

broccoli and clover sprouts with pea shoots. Toss sprouts in sauce.

Shed beets. Lemon juice on beets.
Sprouts on top.
Hemp seeds on beets.
Spirulina (powdered on top through a fine mesh stainer)
Coriander. Zested lemon. Cracked pepper.

Keep It Simple, Nutritious, Delicious: Brown Rice & Kale

Brown rice, with a balancing Ayurvedic hot curry mix (cumin, ginger, fenugreek, fennel, yellow mustard, coriander, salt, pepper, cayenne pepper), sea salt, and oregano. This morning’s farmers’ market-fresh organic kale sautéed with water and a hand-squeeze of lemon juice, (removed from heat and lightly coated with) untoasted sesame oil, and cumin seed. Organic, fresh, simple, wholesome, satisfying, good. This is a GREAT meal.
